Plum Oatmeal Cookies
Finely chop the dried plums. Combine the flour, baking powder, baking soda and 1/2 teaspoon of salt in a large bowl. Beat the butter and sugar together in a separate bowl until light and fluffy. Add the eggs and mix well. Stir in the flour mixture, oats and chopped dried plums and knead to form a smooth dough. Using floured hands, shape the dough into a roll about 30 cm long, wrap with plastic wrap and refrigerate for 1-2 hours.
Line a baking sheet with parchment paper. Cut the dough roll into 1 cm (approximately 3/8 inch) thick slices, dust with powdered sugar and place onto the prepared baking sheet.
Bake in an oven preheated to 200°C/180°C convection (approximately 400°F/350°F convection) for about 12 minutes, until golden brown.
Remove the cookies from the oven and cool on a wire rack.
