Preparation steps

Rinse orange and remove zest. Set some of zest aside as a garnish. Squeeze juice from orange. Rinse, halve and remove pits from plums. In a saucepan, combine plums with sugar, apple juice, orange juice, cinnamon and 200 ml (approximately 3/4 cup) water. Simmer gently over low heat, about 30 minutes. Line a sieve with cheesecloth and strain plums through it. Let drain well (2-3 hours) over a smaller pot.

Soak gelatin sheets in a bowl of cold water until softened, about 10 minutes.

Measure 600 ml (approximately 2 1/2 cups) of the strained plum liquid, topping off with plum wine if necessary. Cook gelatin in a small saucepan until dissolved. Mix in the strained plum liquid and divide mixture among 4 glasses. Refrigerate until set. Whip cream with cream stabilizer and vanilla sugar until stiff peaks form. Top desserts with whipped cream and garnish with reserved orange zest.
