For crust
350 grams Pastry flour
100 grams sugar
salt
1 egg
230 grams butter
For fruit topping
800 grams Mirabelle plum
300 milliliters Orange juice
1 ½ packets Vanilla pudding
300 milliliters Whipped cream
4 Tbsps sugar
For crumble topping
100 grams butter
175 grams Pastry flour
50 grams slivered almonds
2 Tbsps honey
80 grams sugar

Preparation steps

For the crust, combine the flour, sugar and a pinch of salt and make a well in the center. Beat the egg and cut the butter into small pieces. Transfer the egg and butter to the well. Using your hands, quickly knead into a smooth dough. Shape into a disc, cover in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 180°C (approximately 350°F).

For the fruit topping, rinse, halve and stone the Mirabelle plums.

Stir together 3 tablespoons orange juice with the pudding mix until smooth. Place the remaining juice with the cream and the sugar in a pot and bring to a simmer. Stir in the pudding mixture. Bring to a simmer, remove from heat and let cool.

For the crumble topping, combine all ingredients and knead together.

Roll the dough on a floured surface until slightly larger than the baking pan. Line with parchment paper. Press the crust into the baking pan. Evenly spread the pudding over the dough and top with the Mirabelle plums. Sprinkle with the crumble mixture. Bake for about 40 minutes. Remove, let cool and serve cut into pieces.
