1 Rinse plums, halve and remove pits.
2 Squeeze out the lemon juice. Bring 2 tablespoons juice, plums, honey and pear juice to a boil in a pot. Cook until plums soften and liquid thickens slightly, 5-6 minutes.
3 Mix cornstarch with a little cold water until smooth, then stir into compote. Cook while stirring until liquid thickens, about 1 minute. Remove from heat and let cool, 10-15 minutes.
4 Halve the vanilla bean lengthwise, scrape out seeds and mix with yogurt in a bowl. Add sweetener to taste and serve with the compote.
