Preparation steps

1.

Rinse the plums, remove the stones, and thinly slice. Caramelize the sugar lightly, then deglaze with the brandy. 

2.

Add the apple juice and the lemon juice, then bring to a boil. Slit the vanilla bean lengthwise. Add the vanilla bean and the plums to the liquid. Stir to combine, then remove from the heat.
