500 grams Pastry flour
40 grams Yeast
1 teaspoon salt
1 teaspoon sugar
250 milliliters warm water
250 grams Bacon (not smoked)
3 sprigs fresh rosemary
salt
peppers (freshly ground)
cold pressed olive oil
300 grams Cherry tomatoes
4 tablespoons freshly grated Parmesan

Preparation steps

Mix the flour, yeast, salt, sugar, and water into a smooth dough. Cover and let rise for 60 minutes.

Cut the bacon into small cubes. Rinse and halve the tomatoes. Rinse the rosemary, shake dry, pluck the needles and chop.

Knead the dough well and divide it into two part. Sprinkle the table with flour and roll out each piece of dough into a round and place on a pizza pan. Brush the dough with 2 tablespoons of oil and sprinkle with salt and pepper. Top with the tomato halves and sprinkle with the diced bacon and rosemary. Generously sprinkle with Parmesan and bake until golden brown in a preheated oven at 250°C (approximately 475°F) for 15-20 minutes. Drizzle with olive oil as desired and serve with a glass of red wine.
