1 pinch salt
200 grams powdered sugar
2 eggs
150 grams Cultured butter (cold)
400 grams Marzipan
100 grams ground Pistachio
5 tablespoons

Preparation steps

1.

Mix flour with cinnamon, 1 pinch of salt and 50 grams (approximately 2 ounces) of powdered sugar. Form into a mound on a flat work surface and create a well in center. Separate 1 egg, reserving yolk and saving white for another use.

Place yolk and remaining egg into well. Cut butter into pieces and add to flour mixture. Cut mixture with a large knife until crumbly and then knead with your hands into a smooth dough. Divide dough into thirds and wrap in plastic wrap. Refrigerate for 1 hour.

Meanwhile, cut marzipan into pieces and knead with ground pistachios and 50 grams (approximately 2 ounces) of powdered sugar. Divide into 3 parts and shape each into a 30 cm (approximately 12 inch) long roll.

Roll dough pieces out on a floured surface into 3 rectangles measuring about 10 x 30 cm (approximately 4 x 12 inches). Drizzle with milk and place one marzipan roll in each rectangle and roll.

Place dough rolls with seam side down on a baking sheet lined with baking paper and bake in preheated oven at 180°C (approximatey 350°F), convection oven 160°C (approximately 320°F), gas mark 2-3. Bake 15-20 minutes. Pull roles with baking paper from baking sheet and leave to cool.

Mix remaining powdered sugar with 2 tablespoons water until smooth and spread over rolls. Sprinkle with chopped pistachios. Dry and cut into 1 1/2 cm (approximately 1/2 inch) slices and serve.
