Pistachio and Vanilla Cookies
For the cookie dough, mix the ground pistachios with butter, sugar, vanilla seeds, egg, salt and flour, and knead to a smooth dough. Wrap the dough in plastic wrap and chill for 30 minutes in the refrigerator.
Divide the dough into 3 portions and roll out 4 mm thick. Cut out round cookies (5-6 cm diameter) (approximately 2 inches diameter) from the rolled dough using a round ccokie cutter with wavy margins. Put the cookies on a baking sheet lined with parchment paper and bake in a preheated oven at 180°C (fan: 160°C, gas mark 2-3) (approximately 350°F) for about 10-12 minutes.
Remove the baking sheet from the oven and allow the cookies to cool.
Decorate the cookies as desired with cocoa powder and sanding sugar.
