500 grams Pastry flour
1 cube fresh Yeast (42 grams or 1 1/2 ounce)
250 milliliters lukewarm milk
150 grams sugar
1 pinch salt
100 grams butter
60 grams Shelled pistachio
250 grams Apricot jam
2 tablespoons lemon juice
75 grams ground Poppy seeds
1 teaspoon cinnamon
½ teaspoon Cardamom (ground)

Preparation steps

1.

Dissolve yeast in lukewarm milk until. Add 1 teaspoon sugar.

Combine flour, 90 grams (approximately 3 ounces) sugar, a pinch of salt and butter in a bowl, pour in yeast mixture and knead to form a dough. Cover and let rise 45 minutes in a warm place.

Meanwhile, coarsely chop pistachios. Heat 200 grams (approximately 7 ounces) jam and lemon juice in a pan and set aside. Combine jam, pistachios, poppy seeds, remaining sugar, cinnamon and cardamom.

Divide dough in half. Roll out each piece on a floured surface to for a 1 cm (approximately 1/3 inch) thick rectangle. Brush with pistachio mixture, roll up dough and slice 2 cm (approximately 2/3 inch) thick.

Line a baking tray with parchment paper and put slices on tray. Press slightly to flatten and bake in an oven preheated to 180°C (approximately 350°F) for 20-25 minutes.

Meanwhile, heat remaining jam with 2-3 tbsp water in a saucepan. Strain through a sieve. Remove pinwheels from oven, brush with jam mixture, dust with powdered sugar and serve.
