Preparation steps

Preheat oven to 350ºF. Line a 12 well muffin tray with greaseproof paper or paper lines.

Thoroughly drain the pineapple and set aside. In a medium bowl, combine the melted butter, sugar, eggs and salt. Stir until smooth and creamy. Add in the buttermilk.

In a separate bowl, combine the flour, baking powder and poppy seeds. Stir dry ingredients into the egg mixture, stirring until dry ingredients are just moist. Gently fold the pineapple into the mixture.

Spoon the batter into the prepared muffin tray, filling each well about two-thirds full.

Bake for 25 to 30 minutes, or until cooked thorough. Cool in the muffin tray for about 5 minutes. Transfer the muffins to a wire rack to cook completely.

For Glaze:

In a mixing bowl, combine confectioners' sugar, melted butter and lemon juice, 1 teaspoon at a time. Stir until smooth and the desired consistency has been achieved. Drizzle glaze over completely cooled muffins and decorate with candied fruit.
