Preparation steps

For the cake, beat margarine until creamy. Cut marzipan into pieces, mash with a fork and gradually mix with sugar and eggs into margarine. Mix flour, cornstarch and baking powder, sift over margarine mixture and fold in with a whisk. Stir pineapple chunks into batter. Grease a pineapple-shaped baking pan (or a springform pan) with butter or oil, dust with ground almonds and pour in batter. Bake cake in oven preheated to 180°C (fan: 160°C, gas mark 2-3)(approximately 350°F) for 45-50 minutes.

Let cake cool in pan for 5-10 minutes, then invert pan to remove cake to a wire rack to cool completely. For decorating, drain pineapple jam through a sieve, heat while stirring with 1 tablespoon water and brush over cake. Mix powdered sugar with pineapple juice until spreadable, place in a pastry bag with a small round tip and pipe icing following the contours of the pineapple. Decorate cake with pineapple chunks and ground pistachios, if desired, to serve.
