150 grams Marzipan
150 grams softened butter
150 grams sugar
1 packet Vanilla sugar
4 eggs
1 pinch salt
1 packet Baking powder
350 grams Pastry flour
3 tablespoons Amaretto
8 sheets clear gelatin
400 grams Whipped cream
For the garnish
80 grams chopped almonds

Preparation steps

Peel pineapple and cut out stalk. Cut lengthwise and into quarters.

Cut about 150 grams (approximately 5 ounces) of pineapple into small pieces. Cut marzipan into small pieces.

Mix butter and sugar until fluffy and add 1 tablespoon vanilla sugar. Gradually stir in the eggs, salt and baking powder. Add chopped pineapple, marzipan and Amaretto. Pour batter into greased pan and bake in preheated oven on center rack (180°C) (approximately 350°F) for about 1 hour. Remove from oven and allow to cool slightly in the pan, then remove and allow to cool completely.

Toast almonds in a dry pan. Mix gelatin in cold water and let sit for about 10 minutes. Thinly slice 125 grams (approximately 4 ounces) of pineapple and reserve for garnish. Puree remaining pineapple and bring to a boil in a saucepan while stirring, then remove from heat and let cool slightly. Slowly mix gelatin with 3 tablespoons hot pineapple puree, then add the remaining pineapple puree and mix thoroughly. Refrigerate until the mixture begins to set. Split cake horizontally.

Whip cream with 1 tablespoon sugar until stiff. Spread half of whipped cream on bottom half of cake and layer pineapple puree mixture on top. Place second half of cake on top. Spread whipped cream on top of cake. Decorate the edges with almonds. Fill a pastry bag with remaining cream with a large star tip and decorate the top of the cake. Garnish with small marzipan pineapples, if desired.
