Pineapple-Banana Quark Dessert
In a bowl, stir the quark with 1 tablespoon of the coconut, sugar and vanilla sugar until smooth. Toast the remaining coconut in a dry skillet until golden. Remove to a plate.
Peel the pineapple and cut into small cubes. Peel and slice the banana. In a bowl, stir the pineapple and banana with the lime juice. Divide 2/3 of the fruit mixture between dessert glasses. Top with the quark mixture and the remaining fruit. Sprinkle with the toasted coconut. Serve garnished with the lemon balm or mint leaves.
