Pickled Herring with Potatoes, Green Beans and Bacon
Scrub potatoes and cook in boiling salted water, about 25 minutes. Rinse, trim and cook green beans in boiling salted water, 10-12 minutes.
Finely dice bacon. Fry bacon in oil until crispy and brown. Peel onions and cut into wedges.
Drain and peel potatoes. Drain beans. Divide potatoes, pickled herring and onions among plates. Top with beans and drizzle with bacon dressing. Garnish with dill, if desired.
