Pickled Herring with Marinated Potatoes and Radishes
Rinse the potatoes thoroughly under running water and cook in a little salted water for about 25 minutes. Rinse, trim and slice the radishes. Rinse the apples, cut into quarters, remove seeds and cut into thin strips. Drain, halve or quarter the potatoes. Combine lemon juice, salt and pepper to taste, mustard, sugar and oil, mix with the hot potatoes and adjust seasonings.
Fold in radishes, apples and chives. Rinse the herring, pat dry and arrange 2 fillets on each plate. Divide marinated potatoes among the plates and serve.
