Pickled Herring with Cucumber and Potato Salad
Scrub potatoes and cook in boiling salted water, 20-25 minutes. Drain potatoes and peel.
Rinse cucumbers, peel, halve and remove the seeds. Cut cucumber into slices. Rinse, quarter and remove seeds from apples. Cut apples into thin slices.
Mix mayonnaise with yogurt and pickle brine. Season with salt and pepper. Stir in cucumber and apple. Cut potatoes into small pieces and stir into mixture. Season to taste.
Rinse chives, shake dry and thinly slice crosswise. Mix chives with salad. Serve pickled herring with salad.
