Pickled Herring Salad with Radishes and Apple
Cut herring fillets crosswise into strips (about the width of your finger). Rinse, trim and thinly slice radishes. Rinse, quarter and core apple. Cut apple quarters crosswise into thin slices. Peel, halve and thinly slice onion.
Dice pickled cucumbers. Whisk together cream, yogurt and vinegar. In a bowl, combine herring, radishes, apple, onion, pickled cucumber and chives. Add dressing and mix well. Season with salt and pepper. For best flavor, refrigerate 1 hour before serving.
