Pickled Herring Rolls with Yogurt Dressing
Cut an "x" in the bottom of each tomato and blanch briefly in boiling water. Rinse tomatoes with cold water, peel, quarter, remove seeds and cut into cubes. Peel and halve cucumber, scrape out seeds with a spoon and dice cucumber. Mix yogurt with lemon juice and season with salt and pepper. Whip cream and fold into yogurt mixture by the spoonful.
Drain caper. Mix capers, tomatoes and cucumbers into yogurt dressing. Drain pickled herring on a tea towel, then roll fillets up and secure with toothpicks. Garnish pickled herring rolls with dill sprigs and serve with yogurt dressing.
