Pickled Herring in Cream Sauce
Rinse the herring and pat dry.
Peel the onions and cut into thin rings. Rinse the apple, cut into quarters, cut out the core, cut the flesh into small pieces and sprinkle with 1 tablespoon lemon juice. Drain pickled cucumbers and cut into small cubes. Cut olives into slices.
Mix the mayonnaise with pickling liquid and freshly chopped herbs. Season with salt, pepper and lemon juice. Stir in diced pickled cucumbers and juniper berries. Arrange herring fillets on plates with the onion rings, top with the olive and apple slices and serve drizzled with the sauce.
