Pickled Herring and Bell Pepper Skewers
Rinse pickled herring, pat dry and cut into strips. Drizzle with lemon juice and season with pepper.
Rinse and quarter peppers, remove seeds and ribs and cut into bite-sized pieces. Peel onions and cut into wedges.
Thread herring fillets, peppers, onions and olives alternately onto small wooden skewers. Serve garnished with herbs.
