Preparation steps

1.

Soak herring in water for at least 12 hours, then rinse thoroughly and remove scales, if needed. Cut off heads, fillet fish and remove the backbone. Rinse fillets and drain. Stuff fish with pickles, sliced lengthwise, and roll. Secure with toothpicks. Peel onions, slice into rings and sprinkle over fish.

2.

Rinse chile. Grind coriander in a mortar until coarsely ground. Boil vinegar and 200 ml (approximately .8 cup) of water, chile pepper, coriander, bay leaves, sugar and salt.

3.

Remove broth from heat and let cool, then pour over fish and leave to cool completely. Cover the mixture and chill for about 2 days. Remove and serve.
