- 800 grams new potatoes
- salt
- 600 grams green Beans
- 2 Red onions
- 50 grams smoked, streaky Bacon
- 2 Tbsps White vinegar
- freshly ground pepper
- 4 Tbsps vegetable oil
- 1 Apple
- 1 handful Frisée
- 4 Pickled herring
Preparation steps

Rinse and scrub potatoes thoroughly. Cook potatoes in salted boiling water, 25-30 minutes. Rinse, trim and cut green beans into pieces. Cook in salted boiling water, 6-8 minutes. Drain, rinse with cold water and drain again.

Peel onions and cut into wedges. Cut bacon into cubes. In a pan, cook bacon until crispy. In a bowl, season vinegar with salt and pepper. Whisk in oil and stir in bacon. Pour bacon dressing over beans and onions. Rinse, quarter and remove core from apple. Cut apple quarters into thin slices. Rinse frisée and tear into bite-sized pieces. Mix apple and frisée with beans.

Rinse and pat pickled herring dry. Drain and peel potatoes. Serve potatoes with bean salad and herring.
