4 Pheasant breast (each about 120 grams)

250 milliliters Game stock
100 milliliters dry white wine
1 tablespoon Quince jelly

Preparation steps

Preheat the oven to 100 ° C upper and lower heat.

Rinse pheasant breasts and pat dry. Season with salt and pepper and wrap each in 2-3 slices of bacon. Secure with toothpicks. Heat oil in a nonstick pan and add thyme, sear meat on all sides. Place breasts onto a grill rack (place dripping pan undeneath) and roast in preheated oven at 100°C (approximately 200°F) for about 30 minutes.

Deglaze pan drippings with stock and wine. Simmer down to about 150 ml (approximately  3/5 cup). Add quince jelly and season with salt and pepper.

Rinse figs and cut into wedges. Arrange on plates. Remove pheasant breasts from the oven and remove toothpicks. Slice and arrange on plates, drizzle with the sauce around.

If desired, serve with mashed potatoes and scallions.
