1 kilogram Sour cherry
350 milliliters Red wine vinegar
400 milliliters Red wine
800 grams sugar
1 tablespoon pink peppers
1 teaspoon black peppercorns
1 teaspoon Szechuan pepper
2 bay leaves
½ Cinnamon stick
1 piece Orange peel

Preparation steps

Rinse the cherries, remove the stalks and pierce each with a fork several times. Place in a bowl. Boil the vinegar with the red wine, sugar, pepper, bay leaves, cinnamon, and orange peel. Pour over the cherries. Cover and let sit overnight in the refrigerator.

Pour the cherries through a sieve and place in a sheet tray. Boil the liquid and pour over the cherries. Seal the jars and place in a pot surround each jar with a towel so they don't touch. Fill the pot about half way to up the jars. Cover and cook for about 20 minutes.

Remove the jars from the water and let cool. Let cure for 1 week before serving.
