Pecorino Figs Wrapped in Bacon with Salad
Rinse, pat dry and halve figs. Cut pecorino into 12 pieces. Place a piece of pecorino on each fig and wrap with bacon. Secure with toothpicks. In a large nonstick pan, fry each briefly, so that the bacon is crisp. Rinse lettuce and dry well. Whisk vinegar with salt, pepper, sugar and olive oil. Toss lettuce in the dressing and top with figs and mustard.
