For the dough
160 grams Pastry flour
80 grams butter
1 Tbsp sugar
1 egg yolk
1 pinch salt
For nuts
400 grams coarsely chopped Pecan
50 grams softened butter
150 grams brown sugar
100 grams Whipped cream
1 Vanilla bean (sliced and seeds scraped)
For decorating
4 Tbsps powdered sugar
1 Tbsp Whipped cream

Preparation steps


For the dough: Combine flour, sugar and salt on the work surface. Create a well in the center and add pieces of butter, yolk and 1 tablespoon of lukewarm water. Combine with a pastry cutter, then knead into a dough. Shape into a ball, wrap in plastic and chill for 30 minutes.


For the nuts: Boil pecans, butter, sugar and cream in a saucepan. Cook for 3 minutes, then stir in vanilla seeds and remove from heat.

Line a rectangular baking pan with parchment paper. Roll out dough on a floured surface and press into pan. Prick dough with a fork several times. Bake in an oven preheated to 180°F (approximately 350°F) for about 20 minutes. Remove from oven and top with nut mixture. Bake for 8-10 minutes more.

Remove and let cool slightly. Slice into triangles and let cool. 


For the decoration: Whisk powdered sugar and cream, then pour into a piping bag and use to decorate cookies, as desired. Let set and serve.
