Pears in Red Wine
Peel several thin strips of zest from the orange. Squeeze out the juice. Add orange and zest strips to a saucepan with the red wine, sugar and cinnamon stick. Bring to a boil and simmer gently for 10 minutes. Peel pears, leaving the stem intact.
Remove cinnamon stick and orange peel from the wine and put the pears vertically next to each other in a large pot. Pour over the wine, cover and poach for about 10 minutes over low heat.
Remove the pears from the liquid and distribute on plates. Boil poaching liquid until syrupy. Pour hot syrup over the pears and serve garnished with the orange strips and cinnamon sticks.
