1 Mini food processor, 1 Teaspoon, 1 Bowl, 1 Wooden spoon, 1 Cutting board, 1 Small knife, 1 Small pot, 1 Kitchen towel, 1 Pastry brush, 1 Parchment paper, 1 Baking sheet, 1 Aluminum foil, 1 Tea strainer, 1 Tablespoon, 1 Kitchen scale, 1 Mandoline

Preparation steps

Finely grind the hazelnuts in a mini processor. Mix in a bowl with the cocoa powder and cinnamon.

Rinse pears, wipe dry, quarter, core and cut on a mandoline into very thin slices. Mix into the nut mixture along with 2 tablespoons of honey and the vanilla sugar.

Melt butter with the remaining honey and 2 tablespoons water in a small pot.

Place a sheet of filo dough on a damp kitchen towel. Set aside about 1/4 of the butter mixture. Brush the filo sheet with some of the remaining butter mixture, leaving a small border uncovered. Top with another sheet of dough, brush with some butter mixture, and repeat with remaining filo and more butter mixture.

Spread pear mixture on the top sheet of dough, leaving the border uncovered.

Line a baking sheet with parchment paper. Starting with a long side, roll up the dough into a log, using the towel to roll. Place on the baking sheet.

Brush the log with the reserved butter mixture and bake on middle rack of preheated oven at 180°C (fan 160°C, gas mark 2-3) (approximately 350°F/convection 325°F) until golden brown, about 20 minutes.

Cover with a piece of aluminum foil and continue baking until pastry is cooked through, about 10 minutes more. Remove from the oven and let cool for 10 minutes. Put the powdered sugar in a tea strainer, dust the strudel with the sugar and serve.
