800 grams ripe, fragrant Pear

4 centiliters Pear brandy
1 egg white
dried Pear (for garnish)

Preparation steps

1.

Boil the sugar and pear juice. Peel the pears, cut in half, remove the seeds, cut into small pieces and simmer in the sugar syrup until they are soft and break down into the liquid. Strain through a sieve, season with lemon juice and pear spirits.

Beat the egg white until stiff and fold into the sorbet mixture.

Pour the mixture into a shallow metal bowl and freeze, stirring occasionally (or finish in an ice cream maker).

4.

To serve the pear sorbet, scoop into dessert bowls and garnish with dried pear slices.
