2 shallots (finely chopped)
oz fresh ginger (finely chopped)
1 clove garlic cloves (finely chopped)
2 Pear (approx. 300 g each, cored and diced)
1 tsp Mustard seed
cup Port wine
½ cup sugar (scant)
5 cups black currant
cayenne pepper

Preparation steps

1.
Place the shallots, ginger and garlic into a pot with the pears and the mustard seeds. Add the wine and sugar, mix well and bring to the boil. Stirring constantly, simmer until almost all the liquid has evaporated.

Stir in the blackcurrants, simmer for another 3-5 minutes and season with salt and cayenne pepper.

Transfer to sterilised jars, screw tightly shut and place upside-down to cool.
