1 Peel the pears and put into a pan. Add the lemon juice, vanilla sugar and enough water just to cover the pears. Heat slowly and simmer gently for 5 minutes. Then remove from the heat, add the pear schnapps and leave to cool.
2 Stone and dice the plums. Separate the eggs and mix the sugar, egg yolks, cream, flour, baking powder, butter and vanilla extract to a smooth mixture. Beat the egg whites until they form stiff peaks and fold into the mixture.
3 Divide the mixture between the buttered and floured baking dishes. Press a pear into the middle of each and put a few pieces of plum around the pear, pressing them in lightly.
4 Bake in a preheated oven (175°C) for about 15 minutes. Serve in the dishes, warm or cold.
