1 organic lemon (juiced and zested)
300 milliliters Elderberry juice
400 grams jam sugar
1 Vanilla sugar
2 centiliters gin

Preparation steps

Peel and quarter the pears. Remove the core, and cut the quarters crosswise into slices. Mix the pears with the elderberry juice, lemon juice, lemon zest, jam sugar, and the vanilla sugar. Set aside and let infuse for 1 hour.

Add the mixture to a pot, and bring to a boil. Cook for 5 minutes, remove from the heat, and stir in the gin. Fill the prepared jars to the brim with the jam. Seal tightly and turn upside down to cool for 15 minutes. Turn right side up and cool completely.
