100 grams Dark couverture chocolate
200 grams butter
200 grams sugar
4 eggs

350 grams Pastry flour
1 packet Baking powder
2 tablespoons cocoa powder
400 grams canned Pear (in syrup)
3 tablespoons Chocolate shaving

Preparation steps

Chop the chocolate coarsely and melt over a hot water bath. Remove from heat and let cool slightly. Cream the butter with the sugar until fluffy. Gradually add the eggs, milk, lemon juice and a pinch of salt. Mix the flour with the baking powder and cocoa, then sift into the butter. Pour in the chocolate slowly while stirring with a wooden spoon. Mix until smooth.

Preheat the oven to 180°C (approximately 350°F). Grease the springform pan and dust with flour. Pour half of the batter into the pan and spread evenly. Drain the pears, cut in half and arrange face down over the batter. Pour the remaining batter on top, smooth the surface and bake in the preheated oven for 45-50 minutes until a toothpick inserted into the center comes out clean. Remove the cake from the oven, allow to cool slightly, then carefully remove from the mold, cut into pieces and serve warm, sprinkled with chocolate shavings.
