For the cookies
280 grams Pastry flour
1 teaspoon Baking powder
1 generous pinch baking soda
130 grams softened Margarine
130 grams creamy Peanut butter
120 tablespoons roasted Shelled pistachio (chopped)
200 grams sugar
2 eggs
2 tablespoons milk Chocolate
Toppings
90 grams coarsely chopped Chocolate
2 pink Marshmallow (optional)

Preparation steps

Combine all of the ingredients for the cookies except for the milk chocolate shavings in a large bowl and knead with the dough hook attachment of a hand mixer until smooth. Knead in the chocolate shavings and scoop the mixture by the rounded tablespoonful onto a baking sheet lined with parchment paper, leaving a bit of distance  between each one.

Lightly press the marshmallows and coarsely chopped chocolate onto the tops of the cookies and bake in an oven preheated to 140°C (approximately 285°F) for 12-15 minutes, until golden brown. Remove from the oven, cool on a wire rack and serve with coffee or tea.
