Peanut Butter, Chocolate and Marshmallow Cookies
- For the cookies
- 280 grams Pastry flour
- 1 teaspoon Baking powder
- 1 generous pinch baking soda
- 130 grams softened Margarine
- 130 grams creamy Peanut butter
- 120 tablespoons roasted Shelled pistachio (chopped)
- 200 grams sugar
- 2 eggs
- 2 tablespoons milk Chocolate
Combine all of the ingredients for the cookies except for the milk chocolate shavings in a large bowl and knead with the dough hook attachment of a hand mixer until smooth. Knead in the chocolate shavings and scoop the mixture by the rounded tablespoonful onto a baking sheet lined with parchment paper, leaving a bit of distance between each one.
Lightly press the marshmallows and coarsely chopped chocolate onto the tops of the cookies and bake in an oven preheated to 140°C (approximately 285°F) for 12-15 minutes, until golden brown. Remove from the oven, cool on a wire rack and serve with coffee or tea.
