Preparation steps

Slit the vanilla pod and bring to a boil with the milk, then remove from heat and let stand for 10 minutes. Mix the flour with the egg yolks, remove the vanilla pod from the milk and whisk slowly into the eggs. Mix until smooth, then pour back into the pot and heat gently. Pour the pudding into a bowl and let cool.

Rinse the peaches, cut in half and remove the pits. Cut one peach into wedges. Pour the cooled cream into a piping bag and fill the remaining eight peach halves. Place the brioche on a plate, arrange the filled peaches over them, drizzle with maple syrup and serve with the peach wedges and chocolate sprinkles.
