Peaches in Sparkling Wine with Sugared Rose Petals
- 4 ripe Peaches
- 80 grams sugar
- 400 milliliters sweet Dessert wine
- 4 centiliters Peach liqueur
- 1 teaspoon Rose water
- 1 teaspoon lemon juice
- 100 milliliters Sparkling wine
For the sugared rose petals: Lightly whisk egg white and brush onto both sides of rose petals. Sprinkle with sugar and place on parchment paper until dry, about 3 hours.
Blanch peaches in boiling water. Rinse, peel, remove pits and cut peaches into wedges. In a pan, cook sugar until golden and caramelized. Deglaze, stirring gently, with dessert wine. Add peaches. Cover and cook until tender, 5-8 minutes. Season with peach liqueur, rose water and lemon juice. Let cool.
To serve, ladle peaches and syrup into chilled glasses. Top with sparkling wine and garnish with rose petals.
