Preparation steps

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and butter four individual oven-proof dishes.

For the crumble, mix together the flour, sugar, vanilla sugar and butter. Rub between your fingers to create the crumble texture.
3.
Mix the peaches with icing sugar, lemon juice and peach liqueur, if using, and divide between the dishes. Scatter the crumble over the top and bake for 25-30 minutes until golden brown.
4.
Remove from the oven and top with a spoonful of crème fraîche. Grate over a little tonka bean and serve.
