Ingredients

For the compote

For the cheese

mixed Herbs (e. g. basil, coriander, oregano, tarragon, finely chopped)

Preparation steps

Scald the peaches with boiling water, refresh in cold water and peel. Cut into wedges. Bring the wine and juice to the boil with the lemon juice, liqueur, cinnamon and sugar. Add the peaches and poach for around 5 minutes - they should still be fairly firm. Transfer to a bowl and leave to cool completely.

For the cheese, scatter the herbs over a plate and mix with some salt and ground black pepper. Roll the cheese in the mixture, coating completely with herbs.

To serve, put a little compote on each plate. Cut the cheese into approx. 1 cm slices and arrange on top. Garnish with edible petals and fresh herbs as desired.
