For the cake
2 eggs
60 grams sugar
40 grams Pastry flour
40 grams cornstarch
1 generous pinch lemon zest
For the filling
100 grams softened butter
200 grams cream cheese
60 grams powdered sugar
100 grams dried Peaches
For the covering
300 grams Marzipan
2 centiliters Peach liqueur

Preparation steps


Preheat oven to 180°C (approximately 350°F). For the cake, separate eggs and beat egg whites until very stiff. Mix half of sugar with egg yolks and whisk. Mix flour with cornstarch and lemon zest. Fold egg whites into yolk mixture. Sift flour mixture in and stir. Use a spatula to fold until light and airy. Spread onto a baking sheet measuring 20 x 30 cm (approximately 8 x 12 inches) and bake for 12 minutes or until light yellow. Cool.


For the filling, mix butter, cream cheese and powdered sugar. Cut dried peaches into small cubes and add to mixture. Crumble cake into mixture and mix well. Use hands to form small balls, about 6 cm (approximately 2 inches) in diameter. Place on a plate and cover. Chill for 5 hours.


For the covering, knead marzipan with liqueur until easy to shape. Cover cake balls in a thin layer of marzipan. Stir red food coloring with a little water and brush on one side of cake balls to resemble a peach.


Individually pack peach balls as desired in baking paper and serve.
