Preparation steps

Juice the lemon. In a saucepan, bring the sugar and 250 ml (approximately 1 cup) of water to a boil and cool.

Meanwhile, blanch the peaches in a pot of boiling water for about 10 seconds. Peel, halve, remove the pit and dice. Transfer to a blender and puree together with half of the lemon juice, half the sugar water and the peach liqueur.

For the red currant sorbet, rinse 400 grams (approximately 14 ounces) of currants, pull off the stems and puree the red currants. Strain through a sieve. In a bowl, mix the puree with the remaining lemon juice, remaining sugar water and the pomegranate syrup. Freeze both sorbets separately in an ice cream machine or place in a bowl for at least 3 hours in the freezer, stirring every 30 minutes with a fork so that the sorbets are smooth.

Bring to room temperature 20 minutes before serving. Meanwhile rinse remaining currants and shake dry. Scoop balls of the sorbets into glasses and serve garnished with red currants.
