Pea Soup with Lime and Cilantro
Cook peas in salted boiling water, 8-10 minutes. Drain. Peel and finely chop onion. In a saucepan, sauté onion in 1 tablespoon butter over low heat. Add broth, bring to a boil and add peas. Remove pan from the heat and let cool slightly.
Rinse cilantro and strip leaves from stems. Stir cilantro leaves, 1 tablespoon butter and lime juice into peas. Puree until smooth. Season with salt and pepper. Divide soup among bowls and serve garnish with Acini di pepe.
