Place flour on the work surface and create a well in the center. Add egg, sugar, salt and pieces of butter to well. Knead into a smooth, supple pastry. Wrap in plastic and chill for about 30 minutes.
Thinly roll out on a floured surface and place on a buttered baking sheet.
Press trimmed dough up the side to create edges.
Blind bake, as desired, in an oven preheated to 180°F or (approximately 350°F).
Remove from oven and top, as desired.
