Ingredients
Pasta with Red Onion Sauce
Peel onions and cut into thin strips. Cut pancetta into small cubes.
Rinse oregano, shake dry and pluck the leaves. Crumble chile pepper with fingers.
Cook pancetta in a dry non-stick pan over medium heat until crispy, about 5 minutes, then remove from the pan and drain on paper towels. Meanwhile, bring a large pot of salted water to a boil.
Add the onions and oregano to the pan with the rendered fat and cook for about 2 minutes over medium heat. Cook pasta in boiling salted water according to package instructions until al dente.
Drizzle honey over the onions, caramelize briefly and then stir in the vinegar.
Add crumbled chile pepper and broth to the onions. Cook for 5-6 minutes over medium heat. Mix in pancetta and season with salt. Drain the pasta and serve with onion sauce.
