200 grams Penne
300 grams kale
300 grams Acorn squash (peeled)
½ chili pepper (chopped)
1 splash white wine
50 milliliters Vegetable broth
2 Tbsps Parmesan
salt
Nutmeg (ground)
2 Tbsps butter

Preparation steps

1.

Boil penne in salted water until al dente according to package specifications.

Rinse kale, remove tough stalk and chop coarsely. Blanch in salt water 2 min., strain, rinse and drain.

Dice pumpkin.

Sauté kale about 5 min. on low heat in butter. Add diced pumpkin and chile, sauté and deglaze with a little white wine. Pour in broth and simmer about 10-15 minutes until al dente. Season with salt and nutmeg, mix in drained penne and toss briefly. Serve in a warm plate or bowl and garnish with Parmesan.
