300 grams grip Pastry flour
3 eggs
salt
also
500 grams sliced Pancetta
125 milliliters Sour cream
250 grams Crumbs or plugs Ricotta cheese
freshly ground peppers

Preparation steps

Mix the flour, the eggs, a little salt and a little water (add water slowly so that the dough is not too soft) and knead into a smooth dough. Let it rest briefly and either roll flat into 1-2 mm (approximately 1/16 inch) thick with a rolling pin or roll through a pasta machine. Cut the dough into equal sized diamond shapes.

Meanwhile, cook the pancetta in a skillet until crispy, drain on paper towels and keep warm, reserving the drippings in the skillet. Cook the pasta in boiling salted water until al dente and then add to the skillet with the reserved drippings. Stir in sour cream and ricotta and season with salt and pepper. Add desired amount of pancetta, spoon onto plates, and serve immediately.
