- 400 grams Tagliatelle
- 250 grams Ricotta cheese
- 4 Tbsps finely chopped Fresh herbs (varied)
- 2 Tbsps freshly grated Parmesan
- salt
- freshly ground peppers
- olive oil (extra virgin)
- Basil (for garnish)
Preparation
1.
Cook tagliatelle in plenty of salted water until al dente, drain and put 1 cup of cooking water aside.

Mix ricotta with 4-5 tablespoons of cooking water, herbs, 2 tablespoons olive oil, salt, pepper and Parmesan. Add more cooking water if needed.
3.
Divide pasta into servings, pour sauce over and garnish with basil leaves. Serve immediately.
