Pasta Salad with Arugula and Vegetables

- 400 grams Spaghetti
- salt
- 2 yellow Hungarian wax peppers
- 500 grams Tomatoes
- 2 handfuls Arugula
- 1 handful cilantro
- 1 garlic clove
- Sea salt
- 4 Tbsps white balsamic vinegar
- 1 Tbsp lemon juice
- 5 Tbsps olive oil
- 4 Tbsps Vegetable broth
- 1 pinch sugar
- freshly ground peppers
- 60 grams black Olives (pitted)
Preparation

Boil the spaghetti in salted water until al dente. Rinse in cold water and drain. Rinse the yellow pepper, remove stem and seeds and cut into thin rings.

Rinse tomatoes, cut out stems and cut into wedges. Rinse arugula and cilantro and remove leaves.

Peel the garlic, finely chop and grind finely with a little sea salt. Stir in the vinegar, lemon juice, oil and broth and season with sugar, salt, and pepper. Toss the remaining salad ingredients with olives and serve on plates.
