Preparation steps

1.

Halve passion fruit and scrape pulp with seeds. Set aside 2 tablespoons of seeds. Strain the rest through a sieve to remove seeds.

Separate eggs. Whisk egg yolks with mascarpone, quark, powdered sugar, passion fruit seeds and fruit puree until smooth. Beat egg whites with orange juice until stiff and fold into cream. Place into a piping bag with a serrated nozzle and pipe cream into cups. Serve.
