Parfait with Spiced Biscuits
For the parfait, mix the egg yolks with sugar, vanilla sugar and apple juice in a stainless steel bowl, and beat over a hot, not boiling, water bath until white and creamy. Place the bowl in a cold water bath. Crumble the spice biscuits and stir into the egg yolk mixture gently. Whip the cream until stiff and fold into the egg yolk mixture.
Place the parfait mixture into the loaf pan, smoothen the surface and put in the freezer overnight.
Place the loaf pan briefly in hot water before serving. Release the parfait from the loaf pan and cut into 12 slices.
Serve two parfait slices on each plate garnished with white chocolate shavings.
