Papaya and Coconut Sorbet
Papain from papaya is the perfect digestive aid, because the protein-splitting enzyme supports intestinal activity and boosts the metabolism.
Make sure your papaya is perfectly ripe. To do this, find the papaya that has bright yellow golden skin that gives way slightly at the touch.
Bring the sugar, lime juice, and coconut to a boil. Reduce the heaat, and simmer until the sugar has completely dissolved. Remove from the heat and let cool.
Peel, halve, and remove the seeds from the papaya. Cut the fruit into pieces and puree completely with the coconut lime syrup and the liqueur. Freeze the mixture in an ice cream machine, until it has a nice, creamy consistency.
If you don't have an ice cream machine, you can place the mixture in a flat, metal pan and freeze for at least 4 hours in the freezer. Occasionally stir the mixture with a fork strongly for 20 minutes.
Form into balls to serve.
